An Excellent Relish for a Convalescent

Cut some codfish to bits the size of a pea, and boil it a minute in water to freshen it. Pour off all the water, and add some cream and a little pepper.

Split and toast a Boston cracker, and put the above upon it. Milk with a little butter may be used instead of cream.

Ham or smoked beef may be prepared in the same way. For a variety, beat up an egg and stir it in, instead of cream, or with the cream.

These preparations are also good for a relish for a family at breakfast or tea.

Arrowroot Custard for Invalids

One tablespoonful of arrowroot.

One pint of milk. One egg.

One tablespoonful of sugar.

Mix the arrowroot with a little of the cold milk, put the milk into a sauce-pan over the fire, and when it boils, stir in the arrowroot and the egg and sugar, well beaten together. Let it scald, and pour into cups to cool. A little cinnamon boiled in the milk flavors it pleasantly.

For Insomnia

A heaping bowl of bread and milk, seasoned with salt, and eaten just before retiring, is recommended as a sure cure for the worst case of insomnia.

Heartburn, Remedies For

Add two drams of carbonate of magnesia to a cupful of milk, and drink it whenever the rising is experienced.

Eating a raw turnip will also take away the smarting sensation.

The following effervescing drink is also good:— The juice of an orange, with loaf sugar to flavour, and, in proportion to the acidity of the orange, a little bicarbonate of soda. Mix the orange juice, sugar, and water together in a tumbler, then add the soda; stir, and drink while effervescing.

Mustard Whey, for Constipation, &c.

Take a cupful of milk, and the same quantity of water, and boil them together with half an ounce of mustard-seed till the curd separates, then strain. Dose : One dessert-spoonful an hour before breakfast.

A teacupful of the above mixture, taken several times a day, gives great relief in cases of dropsy, palsy, and chronic rheumatism.

Wash for the Skin

An infusion of horse-radish in milk, or the fresh juice of house leek, are both good.

Honey water, very thick, is good in frosty weather.

Also, a wash made of 4 oz. potash, 4 oz. rose water, and 2 oz. lemon juice, mixed with 2 quarts of water; pour 2 table-spoonsful in a bason of water.

Acidity of the Stomach

This unpleasant disorder gives rise to heart-burn, flushings of the face, and other unpleasant sensations. It is most readily cured by taking two teaspoonfuls of magnesia in a tumbler of milk or water, the former is better.

Alum Whey

Mix half an ounce of pounded alum with one pint of milk. Strain it, and add sugar and nutmeg to the whey. It is good in cases of hemorrhages, and sometimes for colic.

Mutton Custard

May 4th, 2020

1 quart of milk.
2 ounces of mutton suet.
Stick of cinnamon, 5 inches long.
1 tablespoonful of flour.
1/2 teaspoonful of salt.

The suet must be from the kidneys; sweet, and free from all tough membrane. Shred it very fine, and put it in the double-boiler with the cinnamon and milk; reserving, however, one gill of the milk. Cook for one hour, then strain. Return the strained liquid to the double-boiler, and place on the fire. Mix the flour and cold milk to a smooth paste, and stir into the hot mixture. Add the salt, and cook for ten minutes. Give the patient as much of this as he will willingly take; say, half a pint every four or five hours. Keep the patient warm and quiet. This is a particularly good remedy in severe cases of bowel and stomach trouble, being nourishing and soothing.

Mustard Whey, for Dropsy and for Rheumatism

Boil 1 1/2 oz. bruised mustard seed, in a quart of milk and water, till the curd which forms is separated. Strain it and take a tea-cupful three times a day.

Another for Rheumatism: A handful of scraped horse-radish, and a table-spoonful of whole mustard seed, infused in a bottle of Madeira; the longer the better. A wine-glassful in bed at night, and another before the patient rises.
